WHere is a simplified interpretation of a beverage from our latest drinks list. This is a batch premix that is bursting full of essence of a Christmas time, which makes it perfect for hosting a holiday party. Save the extra citrus syrup for breakfast cocktails, desserts, or to make another batch of the drink.
The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Put all the components into a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Next, take off the stove allowing it to cool down entirely. Transfer into an sterilised bottle, seal and store in the fridge, it will last for up to a month.
Preparing the Batch Mix: Mix all the liquids in a big jug, leave to sit for one hour, then strain best through a fine cloth, to ensure it's completely strained.
To serve: Pour 85ml of your batch mix to a mixing glass containing ice, gently stirring gently for about 60 seconds to cool it down. Filter into a chilled martini glass or similar, decorate with some cranberries adding the final touch with a quick spritz of mandarin oil over the drink.
